If there’s one thing that’s made getting healthy dinners on the table easier for me, it’s prepping my proteins ahead of time instead of full meals.

Every Sunday, I spend about 30 minutes mixing up a few marinades and getting proteins into containers or zip-top bags. That’s it. No cooking, no spending hours in the kitchen. Then throughout the week, dinner is as simple as pulling out one protein and turning it into something completely different.

This Chili Crisp Salmon is one of my favorite ways to use that prep. The salmon marinates while I’m busy with everything else, and when it’s time for dinner, everything cooks together on one sheet pan. You get perfectly flaky salmon, caramelized vegetables, and hardly any dishes to wash afterward.

Chili Crisp Salmon Sheet Pan

This Chili Crisp Salmon is one of my favorite ways to use that prep. It’s fresh, packed with protein, loaded with veggies, and honestly feels like something you’d order at a restaurant.

Ingredients
  

  • 4 salmon fillets I used my Chili Crisp Marinade on them
  • 1 large head broccoli cut into florets
  • 1 red bell pepper sliced
  • 1 zucchini sliced into half moons
  • 1 cup shelled edamame
  • 1 tablespoon olive oil
  • Salt and pepper

Let's Make It
 

  • When you’re ready to cook dinner, preheat your oven to 425°F.
  • Toss the vegetables with olive oil, salt, and pepper and spread them onto a large sheet pan.
  • Nestle the marinated salmon between the vegetables and spoon any remaining marinade over the top.
  • Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  • Serve over jasmine rice or enjoy just as it is.

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!
