Homemade Pumpkin Spice Coffee Syrup (Easy Fall Recipe)

If there’s one thing I look forward to every fall, it’s all the pumpkin flavors, especially in my morning coffee! I’ve always loved a good pumpkin spice latte, but making my own pumpkin spice coffee syrup at home is so much easier than I thought it would be.

This homemade pumpkin coffee syrup is made with real pumpkin puree, brown sugar, vanilla, and all those warm fall spices we love. It’s rich, perfectly sweet, and adds the best pumpkin flavor to hot coffee, iced coffee, or homemade lattes.

I originally made this recipe as part of the little take-home gifts for my Petals & Pumpkins dinner party. I wanted to send everyone home with something homemade they could actually use and enjoy the next morning. I paired little bottles of this syrup with homemade pumpkin chocolate chunk granola, and honestly, I think these two make the cutest fall gifts!

The best part? You only need a handful of ingredients and about 15 minutes to make it.

Why You’ll Love This Pumpkin Spice Coffee Syrup

  • Made with real pumpkin. Unlike some store-bought syrups, this recipe uses actual pumpkin puree for a delicious pumpkin flavor.
  • Easy to make. Everything comes together in one saucepan in about 15 minutes.
  • Budget-friendly. You can make several servings for a fraction of the cost of buying pumpkin spice lattes.
  • Perfect for gifting. Pour it into little glass bottles, add a cute label, and you have an easy homemade fall gift.
  • Versatile. Use it in hot coffee, cold brew, iced lattes, or even drizzle a little over pancakes.

Ways to Use Pumpkin Spice Coffee Syrup

My favorite way to use this syrup is in an iced pumpkin spice latte with espresso, milk, and a little cinnamon sprinkled over the top.

You can also add it to hot coffee, cold brew, homemade cold foam, or a chai latte. It’s even delicious drizzled over pancakes or French toast.

Easy Iced Pumpkin Spice Latte

Ingredients:

  • 2 shots espresso
  • 1–2 tablespoons homemade pumpkin spice syrup
  • ¾ cup milk of choice
  • Ice
  • Cinnamon for topping

Instructions:

Add the syrup and espresso to a glass and stir. Fill with ice, pour in the milk, and finish with a sprinkle of cinnamon.

How to Store Homemade Pumpkin Coffee Syrup

Because this syrup contains real pumpkin puree, it needs to be stored in the refrigerator.

Keep it in a clean, airtight glass bottle or jar and refrigerate at 40°F or below. For a conservative homemade-storage recommendation, use within 5–7 days. This is a suggested limit, not a laboratory-tested shelf life.

You can also freeze the syrup in small portions for up to 2–3 months for best quality.

If you’re making this for gifts, I recommend preparing the syrup the day before, keeping it refrigerated, and adding it to the gift baskets just before guests leave. Transport chilled.

Frequently Asked Questions

Can I use pumpkin pie filling instead of pumpkin puree?

I wouldn’t recommend it. Pumpkin pie filling already contains added sugar and spices, which will change the flavor and sweetness of the syrup.

Does homemade pumpkin spice syrup need to be refrigerated?

Yes! Since we’re using real pumpkin, this syrup needs to stay refrigerated. It is not shelf-stable.

Can I make this syrup less sweet?

Absolutely. You can reduce the brown sugar slightly, but the syrup will be thinner and won’t have quite the same sweetness. Reducing the sugar doesn’t make it safe to store at room temperature.

Can I use this in iced coffee?

Yes! It’s one of my favorite ways to use it. Just stir the syrup into the espresso or coffee before adding your ice and milk.

Can I make this ahead for a party?

Yes. I recommend making it the day before your event so it has plenty of time to cool and chill.

Tips for the Best Pumpkin Coffee Syrup

Don’t skip the brown sugar. It adds so much flavor and gives the syrup that cozy caramel sweetness.

Adjust the sweetness. If you prefer your coffee less sweet, start with just one tablespoon of syrup and add more as needed.

Shake before using. Since this syrup contains real pumpkin, some separation is completely normal.

Make a double batch. If you’re making this for a party or homemade gifts, it’s easy to double or triple the recipe.

Use clean bottles. This syrup needs to be refrigerated and should never be stored at room temperature as a shelf-stable preserve.
