One-Pan Chicken Bacon Ranch Gnocchi Bake (Easy 30-Minute Dinner)

If there’s one thing I need more of this time of year, it’s easy dinners with minimal prep and even less cleanup! Between school activities, holiday shopping, decorating, and everything else we somehow manage to squeeze onto the calendar, spending an hour in the kitchen just isn’t happening every night.

And that’s exactly why I love this One-Pan Chicken Bacon Ranch Gnocchi Bake!

I’m partnering with Borden Cheese to share this easy, cheesy dinner that’s perfect for all those busy moments between the holidays. It’s made with pillowy potato gnocchi, tender shredded chicken, crispy bacon, and a creamy garlic ranch sauce, all topped with plenty of melted cheese.

The best part? Everything comes together in one pan, and you don’t even have to boil the gnocchi first!

If you’ve been around here for a while, you know I love a good 30-minute dinner, especially when it tastes like something that took a whole lot more effort. This is one of those meals that looks and tastes like you spent forever making it, but it’s actually so simple.

And with three kids and a busy schedule, those are exactly the kinds of recipes I need.

Why You’ll Love This Chicken Bacon Ranch Gnocchi Bake

There are so many reasons this has become one of my favorite easy dinners!

  • One-pan dinner: Everything cooks in the same oven-safe skillet, which means fewer dishes to wash afterward.
  • Minimal prep: Using rotisserie chicken, precooked bacon, and packaged gnocchi makes this recipe incredibly easy.
  • No boiling required: The gnocchi cooks right in the creamy sauce, saving you an extra pot and step.
  • Creamy and cheesy: The combination of cream cheese, ranch seasoning, and Borden shredded cheese creates the best creamy sauce.
  • Family-friendly: Chicken, bacon, ranch, and cheese? It’s hard to go wrong with that combination!
  • Perfect for busy weeknights: You can have a homemade, comforting dinner on the table in about 30 minutes.

This is the kind of recipe you’ll want to keep in your back pocket for those nights when everyone is hungry and you have absolutely no idea what to make.

Ingredients You’ll Need

The ingredient list is pretty simple, and you probably already have a few of these things in your kitchen.

Potato Gnocchi: You’ll need one 16-ounce package of refrigerated or shelf-stable potato gnocchi. No need to boil it separately!

Cooked Shredded Chicken: I love using rotisserie chicken because it makes this recipe so easy. Leftover cooked chicken works great, too.

Bacon: Cooked and chopped bacon adds so much flavor. You can cook it ahead of time or use precooked bacon to save a few minutes.

Borden Shredded Cheese: I’m using a combination of shredded mozzarella and cheddar for the best melty, cheesy topping. Some of the cheese also goes directly into the sauce to make it extra creamy.

Cream Cheese: This gives the sauce a rich, creamy texture without having to make a traditional roux.

Milk: Helps thin out the cream cheese and creates a sauce for the gnocchi to cook in.

Garlic: Fresh minced garlic adds so much flavor with very little effort.

Ranch Seasoning: This is where all that delicious ranch flavor comes from. I like starting with a tablespoon and adding more to taste.

Fresh Chives: Optional, but I love adding them at the end for a little freshness and color.

How to Make One-Pan Chicken Bacon Ranch Gnocchi

One of my favorite things about this recipe is just how quickly everything comes together.

Step 1: Make the Creamy Sauce

Start by preheating your oven to 375°F.

Place a large oven-safe skillet over medium-low heat and add a little butter.

Once the butter has melted, add the minced garlic and cook for about 30 seconds, just until fragrant.

Pour in the milk and add the softened cream cheese. Stir until the cream cheese melts and the mixture becomes smooth and creamy.

Next, stir in the ranch seasoning and some of the Borden shredded cheese.

Step 2: Add the Gnocchi

Add the uncooked gnocchi directly into the creamy sauce.

Yes, you read that right! No need to boil it first.

Give everything a good stir, making sure the gnocchi is coated in the sauce.

Let it simmer gently for about 4–5 minutes, stirring occasionally, to begin softening the gnocchi.

Step 3: Add the Chicken and Bacon

Stir in the shredded chicken and most of the crispy bacon, saving a little bacon for topping at the end.

Everything should be coated in that creamy, cheesy ranch sauce.

If the sauce looks a little too thick, add a splash of milk to loosen it up.

Step 4: Top with Cheese and Bake

Sprinkle the remaining Borden shredded cheese evenly over the top.

Transfer the skillet to your preheated oven and bake for 12–15 minutes, or until the gnocchi is tender, everything is heated through, and the cheese is melted and bubbly.

If you like a golden cheesy topping, switch the oven to broil for the last minute or two, keeping a close eye on it.

Step 5: Finish and Serve

Remove the skillet from the oven and sprinkle the remaining bacon and freshly chopped chives over the top.

Let it sit for a couple of minutes before serving.

Then grab a big spoon and scoop out all that creamy, cheesy goodness!

Easy Substitutions and Variations

One thing I love about this recipe is how easy it is to switch things up depending on what you have in the refrigerator.

Add vegetables: Stir in a couple of handfuls of baby spinach or some steamed broccoli to add a little green to your dinner.

Use leftover turkey: This would actually be a great way to use leftover Thanksgiving turkey instead of chicken!

Make it spicy: Add crushed red pepper flakes or a little diced jalapeño for some heat.

Change the cheese: You can use all cheddar, all mozzarella, or a combination of your favorite Borden shredded cheeses.

Use chicken thighs: Leftover cooked boneless, skinless chicken thighs work just as well as chicken breast.

What to Serve with Chicken Bacon Ranch Gnocchi

Since this recipe is already pretty hearty, I like keeping the sides simple.

A big green salad with a light vinaigrette is probably my favorite option because it balances out the creamy sauce.

You could also serve it with roasted broccoli, asparagus, green beans, or a simple side of fresh vegetables.

And if you’re really in the mood for comfort food, a little garlic bread on the side would be delicious for soaking up any extra sauce!

Can You Make Chicken Bacon Ranch Gnocchi Ahead of Time?

You can definitely prep several of the ingredients ahead of time to make dinner even easier.

I recommend shredding your chicken, cooking and chopping the bacon, and measuring out your ingredients in advance.

When you’re ready for dinner, all you have to do is make the sauce, stir everything together, and bake.

I personally prefer cooking the gnocchi right before serving because that’s when it has the best texture. If it sits in the sauce too long before baking, it can absorb too much liquid and become soft.

How to Store and Reheat Leftovers

Refrigerator: Allow leftovers to cool, then store in an airtight container in the refrigerator for up to 3–4 days.

Reheating: Warm leftovers in a skillet over low heat or microwave in short intervals until heated through. I recommend adding a splash of milk because the gnocchi will continue absorbing the sauce as it sits.

Freezing: I don’t recommend freezing the finished dish. Creamy sauces can separate after thawing, and the gnocchi may become mushy.

Frequently Asked Questions

Do you have to boil gnocchi before baking it?

No! For this recipe, the packaged gnocchi cooks directly in the creamy sauce. Just be sure there’s enough liquid in the pan and check that the gnocchi is fully tender before serving.

Can I use frozen gnocchi?

You can, but frozen gnocchi may need additional cooking time and liquid. I recommend refrigerated or shelf-stable gnocchi for the most consistent results.

Can I use ranch dressing instead of ranch seasoning?

I recommend using dry ranch seasoning because it adds flavor without thinning the sauce. Bottled ranch dressing would change the consistency and overall flavor of the recipe.

Can I make this without an oven-safe skillet?

Absolutely! Make the sauce and combine everything in a regular skillet, then transfer it to a greased baking dish. Top with cheese and bake as directed, allowing a little extra time if needed.

Can I use a different type of pasta?

You can, but traditional dried pasta will need to be cooked separately before adding it to the sauce. Gnocchi is what makes this recipe so easy!

Tips for Making the Best Chicken Bacon Ranch Gnocchi

Use rotisserie chicken. This is one of my favorite shortcuts for busy weeknights. You can pull the chicken apart ahead of time and keep it in the refrigerator until you’re ready to make dinner.

Don’t skip the cream cheese. It helps make the sauce extra creamy and gives it that rich, comforting texture.

Use freshly cooked bacon when possible. I love the extra flavor and crunch, but precooked bacon works perfectly when you’re short on time.

Don’t overcook the gnocchi. Gnocchi cooks pretty quickly, and you want it soft and pillowy, not mushy. Check it toward the end of baking.

Save some cheese for the top. Mixing cheese into the sauce makes it creamy, but that layer of melted cheese on top is what really makes this dish!

Let it rest before serving. The sauce will thicken slightly as it cools, making it even creamier.
