Real life weekly meal prep for busy moms who want to prep their week in about an hour!

The goal? Get your meal prep done in about an hour and make the rest of your week easier.

I’ve been wanting to get back into meal prepping for myself and sharing more of it with you guys, but if I’m being real, it’s a lot of work. Between planning everything, prepping, cooking, cleaning and then trying to film it all, I’ve had a hard time making it happen consistently. So instead of overcomplicating it, I’m going to start sharing these meal prep menus in a much simpler way. Think of these as an easy place to find exactly what I prepped for the week, along with the little changes I made to turn some of my favorite recipes into meals that are easy to grab from the fridge and reheat.

This week took me about an hour, and I kept everything pretty simple. I made my Orange Chicken Lettuce Cups, but instead of serving the orange chicken in lettuce cups, I portioned it with steamed rice and broccoli. I also made my Philly Cheesesteak Skillet and swapped the steak I normally use for shaved steak from Trader Joe’s. It cooks so quickly and I actually think it works even better for meal prep because it stays tender when reheated.

Sweet Potato, Sausage & Egg Breakfast Bowls

For breakfast, I made the easiest sweet potato, sausage and egg bowls. I roasted diced sweet potatoes until they were browned and tender, then cooked and browned breakfast sausage in a skillet. While the sausage was still warm, I drizzled a little maple syrup over it—the sweet and salty combo with the sweet potatoes is SO good. I divided the roasted sweet potatoes and maple sausage between my meal prep containers, then topped each one with scrambled eggs and shredded cheddar cheese. There’s really no exact science to these, which is why I love them. You can add as much or as little of everything as you want, and they reheat really well for a quick breakfast during the week.

Easy Protein Snack Boxes

I also put together a few simple snack boxes to have ready in the fridge. Each one has a hard-boiled egg, a slice of sharp white cheddar cheese, two slices of turkey lunchmeat and a chopped dill pickle. On the side, I portioned out ½ cup of Dot’s Snack Mix. Nothing fancy, but it gives me something quick to grab when I’m hungry instead of standing in front of the fridge trying to figure out what to eat.

This is exactly how I want meal prep to feel right now—simple, doable and made up of foods I actually look forward to eating. You don’t need to spend half of your Sunday in the kitchen or make five completely different recipes. About an hour of prep gave me breakfasts, lunches and snacks that are ready to go for the week, and that feels much more realistic for me right now.

WHY I LOVE THIS KIND OF MEAL PREP

Having a few meals ready to go makes such a difference during a busy week. When breakfast is already prepped, lunch is waiting in the fridge, and you have a protein-packed snack ready to grab, you’re much less likely to find yourself standing in the kitchen at 2 pm wondering what you’re going to eat.

That’s why I like to keep these meal preps simple but still give you variety. You’re not eating the exact same thing for every meal. You’re just doing a little work ahead of time so that future you has an easier week.

As always, don’t overcomplicate the process. Prep what you can, and call it a win!
