feta cheese (softened)
I like to use crumbles, but the block of cheese works too.
1/3
cup
plain greek yogurt
1
cup
pumpkin puree
2
tbsp
honey
1
tsp
fresh thyme
salt + pepper to taste
toppings:
fresh rosemary
chopped walnuts or pecans
toasted or candied
honey to drizzle on top

Let's Make It
In a food processor blend together the feta and greek yogurt until smooth.
Add in the pumpkin, honey, thyme, salt and pepper and blend until everything is smooth and creamy. Taste and season with salt and pepper as desired.
Plate the Dip: Transfer the whipped feta mixture to a serving bowl. Use the back of a spoon to create a swirl on top for added texture.
Add Toppings: Drizzle with a little extra honey, and sprinkle fresh chopped rosemary and chopped walnuts or pecans over the top.
Serve with crackers, pita chips, or fresh veggies.
