Ingredients
  

  • 1 lb ground chicken or turkey
  • 8 oz fresh or dried wonton noodles
  • 3 cups shredded green cabbage or coleslaw mix
  • 3 cloves garlic minced
  • 1-2 tsp fresh grated ginger
  • 3 tbsp soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1-2 tbsp hoisin sauce or oyster sauce
  • 1 tsp sesame oil
  • cups chicken broth plus more as needed
  • Optional heat: chili crisp or sriracha

Optional Add-Ins

  • Sautéed mushrooms
  • Shelled edamame
  • Scallions for topping

Let's Make It
 

  • Heat a large skillet over medium-high heat. Add ground chicken along with garlic and ginger. Cook until browned and fully cooked, breaking it up as it cooks.
  • Stir in soy sauce, hoisin (or oyster sauce), rice vinegar, and sesame oil. Let everything simmer for about 1 minute so the flavors bloom.
  • Add the shredded cabbage and cook 2–3 minutes, just until softened but not mushy.
  • Add the dry wonton noodles directly to the skillet. Pour in 1½ cups chicken broth.
  • Cover the skillet and let simmer for 3–4 minutes, stirring occasionally to separate noodles.
  • Remove the lid, toss well, and let everything cook another 2–3 minutes until noodles are tender and the sauce thickens slightly. Add more broth if needed.
  • Taste and adjust seasoning. Finish with chili crisp or sriracha if you like heat.
