Ingredients
  

  • 1 lb boneless skinless chicken breast or thighs
  • 1 ripe peach mashed or blended
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • Salt & pepper to taste
  • Optional: 1 tsp honey or hot honey for extra sweetness I recommend

Let's Make It
 

  • In a bowl or zip-top bag, whisk together the peach, balsamic vinegar, olive oil, Dijon, garlic, salt, pepper, and optional honey.
  • Add chicken and marinate for at least 30 minutes (up to 24 hours). Can freeze in marinade.
  • Thread marinated chicken onto skewers with fresh peach slices and red onion chunks.
  • Grill over medium-high heat for 4–5 minutes per side or until fully cooked and lightly charred.
  • Serve over a bed of arugula with torn burrata and a drizzle of balsamic glaze.
