This easy, flavorful oven-baked BBQ chicken is perfect for meal prep! Juicy boneless, skinless chicken thighs are seasoned to perfection, then roasted to perfection and finished with BBQ sauce.
1. Preheat the oven to 425°F and position the rack in the upper middle section.
2. Season the chicken: In a large bowl, toss the chicken thighs with olive oil, ranch seasoning, paprika, salt, and pepper until evenly coated.
3. Roast: Arrange the chicken thighs in a single layer on a parchment-lined baking sheet. Roast for 18-22 minutes, or until the internal temperature reaches 165°F.
4. Add BBQ sauce: Brush the chicken with BBQ sauce and return it to the oven for another 3-5 minutes to caramelize.
5. Rest & store: Let the chicken rest for a few minutes before slicing or shredding. Store in an airtight container in the fridge for up to 4 days, or freeze for longer storage.
