  • 2 lbs boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp ranch seasoning mix
  • 1 tsp paprika
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper
  • ½ cup BBQ sauce

Let's Make It
 

  • 1. Preheat the oven to 425°F and position the rack in the upper middle section.
  • 2. Season the chicken: In a large bowl, toss the chicken thighs with olive oil, ranch seasoning, paprika, salt, and pepper until evenly coated.
  • 3. Roast: Arrange the chicken thighs in a single layer on a parchment-lined baking sheet. Roast for 18-22 minutes, or until the internal temperature reaches 165°F.
  • 4. Add BBQ sauce: Brush the chicken with BBQ sauce and return it to the oven for another 3-5 minutes to caramelize.
  • 5. Rest & store: Let the chicken rest for a few minutes before slicing or shredding. Store in an airtight container in the fridge for up to 4 days, or freeze for longer storage.
