One-Pan Zucchini & Garlic Chicken Sausage Tortellini – Pasta Night Just Got an Upgrade
This quick and easy one-pan zucchini and garlic chicken sausage pasta comes together in just 20 minutes! A lighter take on pasta night, loaded with fresh zucchini, flavorful chicken sausage, and cheesy tortellini. Even picky eaters will love it!
2medium zucchinishalved lengthwise and sliced into half moons
115 oz can fire-roasted diced tomatoes
110 oz package cheese tortellini (fresh or refrigerated)
2cupschicken broth
2tbsp fresh basilchopped (plus extra for garnish)
Salt & pepperto taste
Parmesan cheesefor serving (optional)
Let's Make It
Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausage and zucchini. Cook until sausage is browned and zucchini is slightly tender, 4–5 minutes.
Add the diced tomatoes (with juices), tortellini, chicken broth, basil, salt, and pepper. Stir, bring to a boil, then reduce heat and simmer uncovered for 8–10 minutes, until tortellini is tender.
Taste and adjust seasoning. Serve hot with parmesan and extra basil, if desired.
I sometimes like to add a little heavy cream to make it a little more creamy, but its great without it!
