Meal Prep Spinach Feta Wraps

- 18 eggs
- 1 cup cottage cheese
- 2 cups chopped spinach
- ¾ cup chopped sun-dried tomatoes
- ¾ cup crumbled feta cheese
- 1 tsp garlic powder
- Salt and pepper to taste go a little heavy on the salt
- 1-2 tbsp bagel seasoning
- 8 low-carb tortillas or tortilla of choice
1. Preheat & Prep:• Preheat oven to 375°F.• Line a 9x13-inch baking dish with parchment paper. 2. Mix Ingredients:• In a large bowl, whisk together the eggs, cottage cheese, bagel seasoning, garlic powder, salt, and pepper.• Stir in the chopped spinach and sun-dried tomatoes. 3. Bake:• Pour the mixture into the prepared baking dish and sprinkle feta cheese evenly on top.• Bake for 20 minutes or until set. 4. Portion & Wrap:• Let the egg bake cool slightly, then cut into 8 equal rectangles.• Place each egg portion into a tortilla, fold, and wrap tightly in parchment paper. 5. Freeze & Reheat:• Store the wrapped wraps in a freezer-safe bag or container.• To reheat, microwave for 1-2 minutes or warm in a skillet until heated through.
