Ingredients
  

  • 18 eggs
  • 1 cup cottage cheese
  • 2 cups chopped spinach
  • ¾ cup chopped sun-dried tomatoes
  • ¾ cup crumbled feta cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste go a little heavy on the salt
  • 1-2 tbsp bagel seasoning
  • 8 low-carb tortillas or tortilla of choice

Let's Make It
 

  • 1. Preheat & Prep:
    • Preheat oven to 375°F.
    • Line a 9x13-inch baking dish with parchment paper.
  • 2. Mix Ingredients:
    • In a large bowl, whisk together the eggs, cottage cheese, bagel seasoning, garlic powder, salt, and pepper.
    • Stir in the chopped spinach and sun-dried tomatoes.
  • 3. Bake:
    • Pour the mixture into the prepared baking dish and sprinkle feta cheese evenly on top.
    • Bake for 20 minutes or until set.
  • 4. Portion & Wrap:
    • Let the egg bake cool slightly, then cut into 8 equal rectangles.
    • Place each egg portion into a tortilla, fold, and wrap tightly in parchment paper.
  • 5. Freeze & Reheat:
    • Store the wrapped wraps in a freezer-safe bag or container.
    • To reheat, microwave for 1-2 minutes or warm in a skillet until heated through.
