Ingredients
  

  • 2 ripe bananas mashed
  • 2 eggs
  • 1 cup cottage cheese blended until smooth
  • 1 scoop vanilla protein powder
  • 1/2 cup almond flour
  • 1/4 cup oat flour or more almond flour to go lower carb
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional add-ins (keep it clean but fun):

  • Mini chocolate chips
  • Chopped walnuts or pecans

Let's Make It
 

  • Preheat oven to 350°F.
  • Blend cottage cheese until completely smooth.
  • In a bowl, mix mashed bananas, eggs, blended cottage cheese, and vanilla.
  • Fold in protein powder, almond flour, oat flour, baking powder, cinnamon, and salt.
  • Pour batter into silicone mini loaf molds (or a lined 8×8 pan).
  • Bake 25–30 minutes, until set in the center.
  • Cool completely, then remove from molds.
