High-Protein Banana Bread Mini Loaves

2 ripe bananas mashed 2 eggs 1 cup cottage cheese blended until smooth 1 scoop vanilla protein powder 1/2 cup almond flour 1/4 cup oat flour or more almond flour to go lower carb 1 teaspoon baking powder 1 teaspoon cinnamon 1 teaspoon vanilla extract Pinch of salt Optional add-ins (keep it clean but fun): Mini chocolate chips Chopped walnuts or pecans
Preheat oven to 350°F.
Blend cottage cheese until completely smooth.
In a bowl, mix mashed bananas, eggs, blended cottage cheese, and vanilla.
Fold in protein powder, almond flour, oat flour, baking powder, cinnamon, and salt.
Pour batter into silicone mini loaf molds (or a lined 8×8 pan).
Bake 25–30 minutes, until set in the center.
Cool completely, then remove from molds.
