This version of apple crumble is perfect when you’re craving those warm, cinnamon-spiced flavors without all the butter and sugar that typically comes with a pie.
In a small bowl, combine the thinly sliced apple, corn starch, cinnamon, maple syrup, water and lemon juice. Toss to coat the apple slices evenly.
In a separate bowl, mix together the gluten-free flour, coconut oil, salt, oats, and maple syrup. Use your fingers or a fork to combine until the mixture becomes crumbly.
Place the apple mixture into a small baking dish. Sprinkle the crumble topping evenly over the apples.
Bake for 20-25 minutes, or until the apples are tender and the topping is golden and crispy.
Let cool for a few minutes, then serve warm with a dollop of vanilla Greek yogurt on top.
