Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 large yellow onions thinly sliced
  • 1 teaspoon kosher salt divided
  • 1½ pounds lean ground beef or up to 2 pounds for extra protein
  • 3 cloves garlic minced
  • 1 teaspoon fresh thyme leaves plus more for garnish
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1½ cups dry orzo
  • 3½ cups beef broth or beef bone broth plus more as needed
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan
  • 1 cup shredded Gruyère
  • Freshly cracked black pepper to taste

Let's Make It

  • Heat olive oil and butter in a large, deep oven-safe skillet over medium heat.
  • Add the onions and ½ teaspoon salt. Cook for 10–15 minutes, stirring occasionally, until softened and golden.
  • Push the onions toward the outside of the skillet and add the ground beef. Cook, breaking it into crumbles, until browned. Drain excess grease if necessary, then combine the beef and onions.
  • Stir in garlic, thyme, Worcestershire sauce and balsamic vinegar. Cook for about 1 minute.
  • Add the dry orzo and stir. Toast for about 1 minute.
  • Pour in the beef broth or bone broth. Bring to a simmer, then reduce heat to medium-low.
  • Cook uncovered for 10–12 minutes, stirring frequently, until the orzo is tender. Add additional broth as needed if the liquid is absorbed before the orzo finishes cooking.
  • Reduce heat to low and stir in heavy cream and Parmesan.
  • Taste and season with remaining salt and freshly cracked black pepper as needed.
  • Sprinkle Gruyère evenly over the top. Cover for 2–3 minutes to melt, or place under the broiler for 1–2 minutes until bubbly and golden.
  • Finish with fresh thyme and serve immediately.

Recipe Notes

  • Ground beef: I prefer 1½ pounds for a good beef-to-orzo ratio. You can increase it to 2 pounds for an extra-beefy, higher-protein dinner.
  • Bone broth: Beef bone broth can be substituted 1:1 for regular beef broth. The exact protein increase will depend on the brand you use.
  • Don’t rush the onions: You don’t need to fully caramelize them, but give them at least 10–15 minutes to develop color and flavor.
  • Watch the liquid: Orzo brands vary. Keep extra broth nearby and add a splash if your skillet becomes dry before the pasta is tender.
  • The sauce will thicken: Keep the orzo slightly saucy when you finish cooking because it will continue absorbing liquid as it sits.
  • Broiling: Make sure your skillet is oven-safe before placing it under the broiler.
