This easy mixed berry cobbler is made with frozen berries and a buttery homemade topping. The perfect nostalgic summer dessert for the 4th of July, served warm with vanilla ice cream.
Preheat oven to 375°F. Grease a 9-inch baking dish or 8x8-inch baking dish.
In a large bowl, combine berries, sugar, cornstarch, lemon juice, vanilla extract, almond extract (if using), and salt. Stir to coat evenly and transfer to prepared baking dish.
In a separate bowl, whisk together flour, sugar, baking powder, and salt.
Cut in cold butter until the mixture resembles coarse crumbs.
Stir in milk and vanilla extract until just combined.
Drop spoonfuls of topping over the berry mixture.
Sprinkle with coarse sugar if desired.
Bake for 40–45 minutes, or until the filling is bubbly and the topping is golden brown.
Cool for 10–15 minutes before serving.
Serve warm with vanilla ice cream.
