Crisp Apple Feta Salad
This crisp apple feta salad is the ultimate fall salad — made with arugula, sliced apples, canned pecans, creamy feta, and a simple honey apple cider vinaigrette. It’s light, fresh, and perfectly sweet and tangy.

For the salad:
- 6 cups arugula or mixed greens
- 1 large Honeycrisp or Fuji apple thinly sliced into sticks
- ½ cup crumbled feta cheese
- ½ cup canned or toasted pecans
- ¼ cup dried cranberries optional but delicious
For the dressing:
- 3 tbsp olive oil
- 1 ½ tbsp apple cider vinegar
- 2 tsp honey
- Salt and pepper to taste
In a large bowl, add arugula, apple slices, feta, pecans, and cranberries (if using).
In a small jar or bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
Pour the dressing over the salad just before serving and toss gently to coat.
