Chocolate Peppermint Protein Oat Bake

2 cups gluten-free oats 1 scoop chocolate protein powder I love Flavcity 1 tbsp cocoa powder 1 cup cottage cheese 1 cup chocolate Fairlife or regular 2% I love Fairlife for the extra protein boost 2 eggs 2 tbsp maple syrup 1 tsp peppermint extract 1 tsp baking powder ⅓ cup mini chocolate chips
Preheat oven to 350°F and line an 8x8 pan with parchment.
In a large bowl, whisk the protein shake, cottage cheese, eggs, maple syrup, and peppermint extract.
Add oats, protein powder, cocoa powder, baking powder, and mix until combined.
Stir in chocolate chips.
Pour into the pan and bake 25–30 minutes or until set.
Cool, slice into 6, and store for meal prep.
