8ozdried banza chickpea cavatappi pasta noodlesor your favorite kind of pasta
16ozcooked chickenchopped
12ozartichoke hearts
1cupchopped spinach
1 1/2 cupssliced cherry tomatoes
4oz mozzarella pearlsI like to add a little extra
fresh chopped basil
1full batch of my green goddess dressingor 1 1/2 cups of store bought
salt + pepper to taste
Let's Make It
Start by bringing a saucepan full of water to a rolling boil to cook the pasta according to the directions on the box.
In the meantime, chop the spinach, tomatoes and make the green goddess dressing.
Once the noodles are done, run them under cold water to stop the cooking process.
In a large bowl, add the noodles, artichokes, tomatoes, spinach, mozzarella, chicken, salt, pepper and green goddess dressing- toss everything until the dressing and ingredients are evenly distributed.
Top with fresh basil and enjoy!
This salad can be served immediately or used for meal prep!
