Sheet Pan Gnocchi, Chicken Sausage + Sun Dried Tomatoes

Ingredients
  

  • 12 oz chicken sausage of choice- sliced I used an herb + garlic
  • 8 oz gnocchi
  • 1 large bunch of asparagus about 3 cups chopped
  • 3/4 cup sun dried tomatoes
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp italian seasoning
  • salt + pepper to taste
  • 1 tbsp lemon juice
  • 1/4 cup parmesan cheese

Let's Make It
 

  • Preheat the oven to 425℉
  • Chop the ends off of the asparagus and discard, then chop the asparagus in half.
  • On a large sheet pan layer the gnocchi, chicken sausage, asparagus + sun dried tomatoes. Season with salt, pepper, garlic + italian seasoning, drizzle with olive oil + lemon juice.
  • Place the baking sheet in the oven and roast for 20 minutes or until browned. If the sun dried tomatoes are starting to burn, stir and continue to roast
  • Once done top with parmesan cheese and serve! I love eating this oven a caesar salad to level it up just a little bit, but it's just as good by itself!
