Dice the chicken and season with paprika, onion, garlic + salt.
Layer the chicken, zucchini + bell peppers on an air fryer pan/basket or a large sheet pan for the oven.
In a bowl mix together the mayo, thai sweet chili sauce, sriracha + honey.
Pour half of the sauce over the chicken + veggies- toss to evenly coat everything with the sauce.
Roast in the air fryer for 15-20 minutes depending on the air fryer or until the chicken reaches an internal temperature of 165℉.
In the meantime, cook the rice and chop the green onions.
Serve over white rice + green onions!
