Ingredients
4
large Yukon Gold potatoes, peeled and diced (you can leave the peel on- personal preference)
2-2.5 lbs or 5 cups diced
Salt and pepper
to taste
1/4
tsp
garlic powder
to taste
1/2
cup
warm milk
4
oz
cream cheese
softened
1/4
cup
butter
add extra if you desire
crispy fried onions for topping
Let's Make It
Preheat your oven to 400°F
Boil the peeled and diced Yukon Gold potatoes in a large pot of salted water until they are fork-tender.
Drain the potatoes
In the same pot, warm the milk, cream cheese, and butter over low heat until the mixture is well combined and smooth.
Return the potatoes to the pot, season with salt, pepper + garlic powder.
Mash the potatoes with a potato masher or use a hand mixer for a smoother consistency.
Transfer the mashed potatoes to a baking dish.
Top the mashed potatoes with crispy fried onions, cover and bake for 15 minutes.
Uncover the poatoes and coninue baking for another 5-10 minutes or until the onions get golden brown and crispy.
Remove from the oven, let it cool for a few minutes, and then serve your delicious mashed potatoes.
