Going meatless with this Arugula + Peach Summer Salad- fresh arugula, peaches, Banza Rice, mozzarella balls + basil with a balsamic glaze!

fresh arugula
balsamic glaze or balsamic dressing
Let's Make It
Boil the banza rice for 5 minutes, rinse with cold water.
In a small bowl, mix together the rice, olive oil, salt, pepper, garlic, basil, mozzarella + peaches.
In each container add 1½ cups of arugula. Divide the rice mixture into each container.
Store in the fridge for up to 5 days!
Top with glaze/dressing when your'e ready to eat!
