Lemon + Berry Quinoa Protein Bowl

The most delicious bowl of whipped lemon cottage cheese, sweet quinoa + mixed berries- this bowl is loaded with protein and great for Meal Prep!

  • food processor or blender

Ingredients
  

  • 3 cups cottage cheese
  • 1 tbsp lemon zest
  • 1 tbsp + 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 3 cups cooked quinoa
  • 1 tbsp maple syrup
  • 2 cups frozen mixed berries
  • extra lemon juice and zest

Let's Make It
 

  • Cook your quinoa according to the instructions on the box. Set it aside to cool down completely while you make the whipped cottage cheese.
  • In a food processorr, add the cottage cheese, lemon zest, lemon juice, vanilla extract and honey. Blend for 1-2 minutes or until the mixture has a whipped cream cheese texture.
  • Once the quinoa has cooled down, add in the maple syrup and a little extra lemon juice, to taste.
  • In your containers add:
    3/4 cup qunioa
    3/4 cup cottage cheese
    1/2 cup frozen berries
    fresh lemon zest on top
