Cook your quinoa according to the instructions on the box. Set it aside to cool down completely while you make the whipped cottage cheese.
In a food processorr, add the cottage cheese, lemon zest, lemon juice, vanilla extract and honey. Blend for 1-2 minutes or until the mixture has a whipped cream cheese texture.
Once the quinoa has cooled down, add in the maple syrup and a little extra lemon juice, to taste.
In your containers add:3/4 cup qunioa3/4 cup cottage cheese1/2 cup frozen berriesfresh lemon zest on top
