Avocado Toast in a Bowl

Bringing all the flavors of avocado toast, but swapping the bread out for roasted potatoes- this perfect for Meal Prep!

Ingredients
  

  • 3 cups chopped red potatoes
  • 2 tbsp everything but the bagel seasoning
  • 1 tbsp olive oil
  • 2 cups arugula ½ cup per bowl
  • 2 cups cherry tomatoes ½ cup per bowl
  • 2 avocados chopped in half down the middle, through the seed
  • 4 oz nitrate free chicken sausage
  • 8 eggs cooked to your prefference- fried, scrambled or hard boiled works!

Let's Make It
 

  • Pre-heat the oven to 425°
  • Toss the chopped red potatoes together with the everything but the bagel seasoning and olive oil, lay flat on a roasting pan, bake at 425° for 25-25 minutes or until potatoes are browned and crispy.
    ***you may need to spray a tiny bit of cooking spray over the potatoes to make sure the poatoes get crispy. This just helps to make sure the oil is evenly distributed without using a ton of oil.
  • After the potatoes have cooked for about 10 minutes add in the chicken sausage and place back in the oven to continue roasting.
  • While the poatoes are cooking chop the tomatoes and start assembling your meal prep containers.
  • When the potatoes are completely cool, add 3/4 cup of potatoes into each bowl.
  • Each bowl will have:
    - ½ cup arugula
    - ½ cup cherry tomatoes
    - ¾ cup of potatoes
    - ½ an avocado
    I love adding 2 fried eggs on mine when I am ready to eat it, I'm just not a fan of re-heated fried eggs. Scrambled eggs taste fine re-heated if you don't have the time to make fresh eggs in the morning! You could even do a hard boiled egg as well!
