2 avocadoschopped in half down the middle, through the seed
4oznitrate free chicken sausage
8eggs cooked to your prefference- fried, scrambled or hard boiled works!
Let's Make It
Pre-heat the oven to 425°
Toss the chopped red potatoes together with the everything but the bagel seasoning and olive oil, lay flat on a roasting pan, bake at 425° for 25-25 minutes or until potatoes are browned and crispy.***you may need to spray a tiny bit of cooking spray over the potatoes to make sure the poatoes get crispy. This just helps to make sure the oil is evenly distributed without using a ton of oil.
After the potatoes have cooked for about 10 minutes add in the chicken sausage and place back in the oven to continue roasting.
While the poatoes are cooking chop the tomatoes and start assembling your meal prep containers.
When the potatoes are completely cool, add 3/4 cup of potatoes into each bowl.
Each bowl will have:- ½ cup arugula- ½ cup cherry tomatoes - ¾ cup of potatoes- ½ an avocadoI love adding 2 fried eggs on mine when I am ready to eat it, I'm just not a fan of re-heated fried eggs. Scrambled eggs taste fine re-heated if you don't have the time to make fresh eggs in the morning! You could even do a hard boiled egg as well!
