How to Make Hot Honey Chicken & Peach Kabobs

These kabobs are incredibly simple.

Start by whisking together the marinade until smooth. Toss the chicken in the marinade and let it rest for at least 30 minutes so it has time to soak up all of those sweet and savory flavors.

Once the chicken has marinated, thread it onto skewers, alternating with peach slices and chunks of red onion.

Grill over medium-high heat, turning every few minutes until the chicken is cooked through and lightly charred. During the last few minutes of grilling, brush the kabobs with a little extra hot honey for an irresistible sticky glaze.

Ingredients
  

Chicken & Kabobs

  • 2 pounds boneless skinless chicken thighs, cut into 1½-inch pieces
  • 3 peaches cut into thick wedges
  • 1 large red onion cut into chunks

Marinade

  • cup olive oil
  • 3 tablespoons hot honey plus more for brushing
  • 2 tablespoons Dijon mustard
  • 2 tablespoons peach preserves
  • Juice of 1 lemon
  • 4 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For Serving

  • Fresh basil
  • Crumbled feta optional

Let's Make It
 

  • In a large bowl, whisk together the olive oil, hot honey, Dijon mustard, peach preserves, lemon juice, garlic, smoked paprika, salt, and pepper.
  • Add the chicken and toss until evenly coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  • Thread the marinated chicken, peaches, and red onion onto skewers, alternating the ingredients.
  • Preheat a grill to medium-high heat and lightly oil the grates.
  • Grill the kabobs for 12–15 minutes, turning every few minutes, until the chicken reaches an internal temperature of 165°F.
  • Brush with additional hot honey during the last 2–3 minutes of grilling.
  • Remove from the grill and garnish with fresh basil and crumbled feta, if desired. Serve immediately.
