There’s just something about opening the fridge and having breakfast already waiting for you… especially during busy seasons when mornings feel chaotic and the last thing you want to do is think about what to eat. These Strawberry Matcha Chia Pudding jars have quickly become one of my favorite meal prep breakfasts because they feel fancy and fresh while still being packed with protein and incredibly simple to make.

And honestly? These taste like something you’d grab from a cute coffee shop for $12… except they’re made with simple ingredients, loaded with protein, and will keep you full for hours.

The homemade strawberry chia layer on the bottom completely takes this recipe to another level. It gives the jars this sweet jammy layer that pairs perfectly with the earthy matcha chia pudding and creamy vanilla Greek yogurt on top. It’s fresh, creamy, slightly sweet, and feels like the perfect spring and summer breakfast.

I also love that these are great for meal prep because once everything is made, all you have to do is layer the jars and grab one out of the fridge during the week. They’re packed with protein thanks to the Fairlife milk and Oikos Pro yogurt, and the chia seeds add fiber that helps keep you full all morning long.

Tips for the best chia pudding

One of the biggest mistakes people make with chia pudding is not letting it chill long enough. This mixture NEEDS at least 4 hours in the fridge so the chia seeds can fully thicken and create that creamy pudding texture.

I personally think overnight is even better.

Another tip: whisk the mixture really well before refrigerating so the matcha fully blends into the milk and doesn’t clump up. I also like to stir it once again after about 10 minutes in the fridge to help evenly distribute the chia seeds.

And don’t skip the strawberry layer. The homemade strawberry chia jam makes these taste so much more fresh and flavorful than basic chia pudding.

Ingredients
  

Strawberry Chia Layer

  • 2 cups chopped strawberries
  • 1 tablespoon chia seeds
  • 1 –2 tablespoons honey
  • 1 tablespoon lemon juice

Matcha Chia Pudding

  • 1 ½ cups Fairlife milk
  • 1 ½ teaspoons maple syrup
  • ¼ cup chia seeds
  • 2 teaspoons matcha powder

Yogurt Layer

  • 1 ½ cups Oikos Pro Greek yogurt
  • 1 teaspoon vanilla extract
  • Honey to taste

Let's Make It
 

Make the Strawberry Chia Layer

  • Add the strawberries, honey, and lemon juice to a small saucepan over medium heat. Cook for about 8–10 minutes, stirring occasionally, until the strawberries soften and begin to break down.
  • Stir in the chia seeds and let the mixture cook for another 1–2 minutes. Remove from the heat and allow it to cool completely.

Make the Matcha Chia Pudding

  • In a bowl or large jar, whisk together the Fairlife milk, maple syrup, matcha powder, and chia seeds until fully combined.
  • Place in the fridge for at least 4 hours or overnight until thickened.

Make the Yogurt Layer

  • Mix together the Oikos Pro yogurt, vanilla extract, and honey until smooth and creamy.

Assemble the Jars

  • Divide the cooled strawberry chia mixture between 3 jars.
  • Top with the matcha chia pudding, then finish with the yogurt layer.
  • Serve immediately or refrigerate until ready to enjoy.
