This Sheet Pan Lemon Dijon Chicken and Potatoes has quickly become one of our favorite family dinners. Juicy, flavorful chicken thighs, crispy roasted potatoes and vegetables all cook together on one pan with the BEST lemon Dijon herb sauce. It’s cozy enough for fall, easy enough for a busy weeknight and on the table in about 30 minutes — which is exactly my kind of dinner.
There is just something about a sheet pan dinner that makes life feel a little easier. You have your protein, veggies and potatoes all right there, everything gets coated in so much flavor, and most importantly, there’s only one pan waiting for you in the sink when dinner is over.
And lately, that is exactly what I need.
Now that we’re back into the school routine, our afternoons seem to fly by. Between school pickup, homework, activities, trying to get a few things done around the house and everyone suddenly asking what’s for dinner, I’m always looking for meals that feel like a real homemade dinner without requiring me to spend my entire evening in the kitchen.
This lemon Dijon chicken has become one of those recipes for us.
It feels cozy and comforting for fall, but the fresh lemon keeps everything bright. The Dijon adds so much flavor without making the sauce feel heavy, and when you add garlic and herbs to the mix, it turns into one of those really simple combinations that tastes like you did a whole lot more than you actually did.

I will forever love a meal where I can throw everything onto one pan and call it dinner.
This one checks all the boxes for me because you’re getting the chicken, the vegetables and a starch from the potatoes all in one recipe. I don’t have to figure out what side dish to make or dirty another pot cooking rice or pasta.
The potatoes get a little head start in the oven, which is important because we want those crispy golden edges. Then the chicken gets added to the same pan and everything finishes roasting together.
As the chicken cooks, all of those lemony, garlicky, herby juices make their way onto the vegetables and potatoes. Those little caramelized pieces around the edges of the pan might actually be my favorite part.
It’s simple food, but it is SO good.

The sauce is probably my favorite part of this entire recipe.
Dijon mustard gives it a savory tanginess, honey balances everything out with just a touch of sweetness, and fresh lemon adds that bright, fresh zing that is SO good with chicken.
Then there’s garlic and herbs.
It’s one of those sauces where you whisk together a handful of basic ingredients and somehow it tastes like something you’d order at a restaurant.
I especially love it with chicken thighs because thighs stay so juicy in the oven. If you use skin-on chicken thighs, the outside gets golden and crispy while all of that flavor stays underneath.
And do not forget about the potatoes. As everything roasts together, they pick up some of the Dijon sauce and chicken drippings and get crispy around the edges while staying soft and creamy in the center.

Why the Potatoes Go Into the Oven First
This is one little step I wouldn’t skip.
The potatoes need slightly longer to cook than the chicken, so I like to get them onto the sheet pan first and give them about a 10-minute head start.
This allows them to start browning and getting crispy before you add the chicken.
After that, everything cooks together on the same pan. You still get the convenience of a one-pan dinner without ending up with perfectly cooked chicken and undercooked potatoes.
Make sure you cut the potatoes into fairly small, evenly sized pieces so they cook quickly. Baby potatoes are perfect for this because most only need to be halved.
A Cozy Fall Dinner That Still Tastes Fresh
When fall rolls around, I immediately start craving roasted dinners, crockpot meals, soups and all of those warm, cozy flavors.
But especially at the beginning of fall, I’m not always ready for super heavy food.
That’s why I love this dinner so much.
You still get the roasted potatoes, herbs and golden chicken that feel comforting and perfect for cooler nights, but the lemon brightens everything up.
It’s kind of that perfect in-between dinner when you’re ready for fall food but still want something fresh.
And your kitchen smells SO good while it’s roasting.
What Vegetables Can I Add?
This recipe is really easy to adjust depending on what you have in the fridge.
Broccoli, green beans, Brussels sprouts, asparagus, carrots or zucchini would all be great with the lemon Dijon flavors.
The biggest thing to keep in mind is cooking time.
Heartier vegetables like carrots and Brussels sprouts can go onto the pan earlier with the potatoes. Faster-cooking vegetables like broccoli, asparagus or zucchini are better added when you add the chicken or even partway through the final roasting time.
This is also a great fridge-clean-out dinner. If I have a handful of vegetables that need to be used, there is a very good chance they are ending up on a sheet pan.
What to Serve With Lemon Dijon Chicken
Honestly, I usually don’t serve much else with this because that’s the whole point.
You already have chicken, potatoes and vegetables on the sheet pan, so dinner is DONE.
If you want to add something, a simple green salad would be perfect. You could also serve it with some warm crusty bread to soak up all of those lemon Dijon pan juices.
For a bigger Sunday dinner, I’d add a simple salad and bread and put the whole sheet pan right in the middle of the table.
Can I Meal Prep This?
Yes! The leftovers are so good for lunch.
Store the chicken, potatoes and vegetables in an airtight container in the refrigerator for up to 3–4 days.
For reheating, I prefer the air fryer or oven because it helps bring some of the crispiness back to the potatoes and chicken. The microwave works when you need something fast, too.
You could also slice the leftover chicken and add it to a salad the next day with the roasted vegetables and potatoes.

Yes. Boneless chicken thighs are a great option and will cook more quickly than bone-in thighs. Keep an eye on the internal temperature and remove them once they’re cooked through.

Can I make this without honey?
Yes. You can leave the honey out, although I love the slight sweetness it adds to balance the Dijon mustard and lemon.

Don’t overcrowd your sheet pan, make sure the potatoes are well coated in oil and give them their 10-minute head start before adding the remaining ingredients. Placing the cut side directly against the pan also helps them brown.

Absolutely, but I would use two sheet pans. Crowding everything onto one pan will cause the ingredients to steam instead of roast.
The Perfect Easy Fall Weeknight Dinner
There are dinners that I make once for the blog and then there are dinners that actually become part of our regular family rotation.

Tips for the Best Sheet Pan Chicken and Potatoes
Give everything some room. If your sheet pan is overcrowded, the ingredients will steam instead of roast. Use a large sheet pan so the potatoes and vegetables have space to get golden.
Cut the potatoes small. Smaller potatoes mean a faster dinner. Halved baby potatoes work perfectly.
Don’t skip the potato head start. Those first 10 minutes help create the crispy roasted potatoes we want.
Use fresh lemon. Since lemon is one of the main flavors here, fresh lemon juice really makes a difference.
Broil at the end. If your chicken needs a little extra color, turn on the broiler for 2–3 minutes at the end. Keep an eye on it because it can go from golden to too dark pretty quickly.
Use a meat thermometer. Chicken should reach at least 165°F in the thickest part without touching the bone.

- 6-8 bone-in skin-on chicken thighs
- 1½ pounds baby potatoes halved
- 2 cups broccoli florets or green beans
- 2 tablespoons olive oil divided
- 1 teaspoon kosher salt divided
- ½ teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano or Italian seasoning
Lemon Dijon Sauce
- 3 tablespoons Dijon mustard
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 2 cloves garlic finely grated or minced
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon dried thyme or rosemary
- Fresh lemon slices optional
- Fresh parsley for serving
Let's Make It
- Preheat the oven to 425°F. Lightly grease a large rimmed sheet pan or line it with parchment paper.
- Add the halved baby potatoes to the sheet pan. Drizzle with about 1 tablespoon olive oil and season with salt, pepper, garlic powder, paprika and oregano. Toss until evenly coated and arrange the potatoes cut-side down when possible.
- Roast the potatoes for 10 minutes to give them a head start.
- While the potatoes roast, make the lemon Dijon sauce. Whisk together the Dijon mustard, lemon juice, honey, garlic, olive oil, salt, pepper and thyme or rosemary until smooth.
- Pat the chicken thighs dry with paper towels. This helps the skin get nice and golden.
- Remove the sheet pan from the oven. Toss the potatoes and add the chicken thighs, skin-side up, along with the broccoli or green beans. Drizzle the vegetables lightly with the remaining olive oil and season with a pinch of salt and pepper.
- Generously brush or spoon the lemon Dijon sauce over the chicken thighs. Add a few lemon slices around the pan, if desired.
- Return the pan to the oven and roast for another 20–25 minutes, or until the chicken is cooked through and reaches at least 165°F internally and the potatoes are tender and golden.
- For extra crispy chicken skin, broil for 2–3 minutes at the end.
- Finish with fresh parsley and an extra squeeze of fresh lemon before serving.
Recipe Notes
- Boneless chicken thighs: You can use boneless, skinless chicken thighs, but they will cook faster. Begin checking them earlier so they don’t overcook.
- Chicken breasts: Chicken breasts can also work, but cooking time will depend heavily on their thickness.
- Vegetable swaps: Try Brussels sprouts, carrots, asparagus, zucchini or cauliflower. Adjust when you add them to the pan based on how quickly they cook.
- Extra sauce: If your family loves sauce, make 1½ times the lemon Dijon mixture. Reserve some before it touches the raw chicken and drizzle it over the finished dinner.
