I feel like we all have those nights where we want something comforting…like a cheeseburger…
but we also don’t want to feel like we need a nap after dinner.
This is that meal.
It has everything:
- savory, seasoned ground beef
- melty cheddar cheese
- sweet, caramelized onions
- fresh toppings and that sauce (because obviously)
…but instead of a bun, we’re layering it over crispy roasted sweet potatoes.
And honestly? I might like it better this way.
It’s one of those dinners that feels fun, a little different, but still super practical.

HOW THIS RECIPE CAME TO LIFE
I originally made my animal-style cheeseburger stuffed sweet potatoes, and they were so good…
but I wanted something even easier.
Something I could throw on a sheet pan, feed my whole family, and not have to individually stuff anything.
So I took:
- the cheeseburger filling
- the caramelized onions
…and turned it into this sheet pan version.

Sheet Pan Cheeseburger Sweet Potatoes
Ingredients
- 4 medium sweet potatoes diced
- 1-2 tbsp olive oil
- Salt pepper, garlic powder
- 1 lb lean ground beef
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp onion powder
- 1-2 tbsp yellow mustard
- 1 cup shredded cheddar cheese
- 1 large yellow onion sliced
- 1 tbsp olive oil
- Pinch of salt
- Shredded lettuce
- Diced tomatoes
- Pickles
- Burger sauce
Let's Make It
- Preheat oven to 425°F.
- Toss sweet potatoes with oil and seasoning. Roast 25–30 min, flipping halfway.
- Cook onions in olive oil over medium-low heat until caramelized.
- Brown beef with seasonings and mustard. Stir in cheese.
- Assemble bowls with potatoes, beef, onions, and toppings.
